� Placez les morceaux dans un plat en verre ou en faïence, en disposant les morceaux les plus gros contre les bords du plat. � Ajoutez les ingrédients nécessaires à la recette et couvrez. � A mi-cuisson, remuez et retournez les morceaux. Laissez reposer volailles entières et morceaux, 5 minutes environ avant de servir.

Les observations et les conseils donnés pour la cuisson des viandes rôties (reportez-vous au chapitre suivant), s�appliquent de la même façon pour les volailles.

� Placez la pièce dans un plat en verre ou en faïence, le dos tourné vers le haut. � Couvrez avec un couvercle ou avec du papier paraffiné. � A mi-temps, protégez les extrémités des pattes et des ailes avec des petits morceaux de papier aluminium. Dans ce cas, il est important que le papier aluminium ne soit pas en contact ou proche des parois du four (distance minimum 1 cm). � Retournez la volaille sur le dos. Poids / Quantité 2 4 6 1 à 1,5 kg
